Stay Healthy: Recipe Ideas from the RSVP Team

Everyone needs a nutritious breakfast and a strong start to our days. Here’s an idea from Health and Wellness Director Christine. While her go-to recipe has a specific set of ingredients, it’s great because it can be customized. Plus, you can take it “on-the-go”!
Overnight Oats in a Jar
You’ll need:
  • 1 mason jar
  • ½ cup rolled oats or muesli (I prefer rolled oats)
  • 1 cup unsweetened vanilla almond milk (you can also use soy or regular milk depending on your preference)
  • 1 tbs. chia seeds
  • ¼ cup sliced almonds
  • 1 tbs. almond butter (you can also use peanut butter or sun butter)
  • ½ sliced banana
  • Handful of blueberries

Place all ingredients in Mason jar and shake, seal, place in refrigerator, and eat in the morning!

Get creative and work with the base of rolled oats, almond milk, and chia seeds. Other items that can be added: cinnamon, vanilla extract, apple, raspberry, cocoa, walnuts, shredded coconut, flax oil or seed, your favorite protein powder, and pumpkin pie spice! Have fun with it and try different combinations.
